Carbonade—a hearty stew that combines beef, beer, and spice cake or cookies—is a classic Belgian recipe that’s also claimed by the Picardie (nicknamed the“Ch’ti”) region in northeastern France. Pain d’épices, or spice cake, is traditionally added to soften the faint bitter note of the dark ale braising liquid—but in the States you can use gingersnap or Dutch speculaas cookies, which are easier to find. Spread with a thin layer of mustard, the cookies melt into the cooking liquid, turning the sauce glossy, thick, and subtly sweet.
